Easy Breezy Ice Cream Pie



     So, I'm "down the shore" and in a very different environment from the cabin.
     No deer, no fern, no mountain view....but I do love the sound of the ocean, the breeze on the bay, and just being around my good old-fashioned Irish family.
      I also love this easy little 3-ingredient recipe that has become part of my beachgoing tradition for well over a decade now.  Whether you are at the shore, in the mountains, or enjoying these leisurely days of summer at home, you can whip up an ice cream pie that is guaranteed to be delightfully devoured.

     Here you go:

     Graham Cracker Pie Crust ~ One package
     Cool Whip ~ One tub, 16 ounces
     Ice Cream ~ ANY one of MANY kinds, half gallon
     Optional ~ Candy or Chocolate Shavings for toppings

     This recipe is almost painfully easy.  The gains far outweigh the cost for this little summer number. All you do is mix half the Cool Whip well with the Ice Cream, pour and spread into the Graham Cracker Pie Crust, top with Candy or Chocolate Shavings if desired, and put in the freezer for four or more hours.  When ready to serve, use the other half of the whipped cream and put a dollup on each slice.

Olympic Gymnastics: A Lifelong Affair



(Never mind the mental lapse in the video. Make no mistake about it, this thing has gone on since 1976 ~ not 1996!)

     The first time I fell in love was the summer after the third grade.
     Our family was visiting my aunt in Washington, DC, where we would spend our days visiting museums, parks, and shrines, and our nights watching sports events in a thing called "The Olympics".
     Not only did the catchy Olympic theme remain in my head for weeks thereafter, but my love affair with the sport of gymnastics began and has been ever since.
      First, and for years, I was obsessed with Nadia Comaneci.  I am sure I drew thousands upon thousands of pictures of her, found every single event on ABC's Wide World of Sports that she might be competing in, and read every biography ever written about her.  My favorite book's binding finally succombed to my multiple readings and literally fell apart.
      My goal was to be her and to get to the next Olympics and score perfect 10s of my own. (That dream basically went into flames once I passed the 5'2 mark and topped out at 5'7 1/2, thus forcing me to abandon my mission and switch careers to basketball and lacrosse.) 
     Alas, I didn't get quite as close to Moscow as I might have liked, and I had to settle for watching her in the 1980 Games from our Sea Isle City, New Jersey beach rental.
     But the love affair began and ~ after years of practicing on a homemade balance beam and wearing down my grandparents' lawn with my cousins and tumbling competitions of our own (complete with trophies made from empty coffee cans) ~ it continues.
      Just like any romance, it's not quite as hot and heavy as it was in the beginning.  I don't know the names of every international competitor from China to Czechoslovakia like I did then. 
      But when I head down to Sea Isle tonight, unpack and settle in, you can bet that I will be fixated in front of the television, watching and waiting to see who will emerge from the Olympiad to join the ranks of heart-stealers like Nadia, Olga, Nelli, Mary Lou, Shannon, Shawn & Nastia.  I will enjoy every minute, every triumph, every fall, every heartbreak, every ankle break, every questionable score, and every great performance, and I will probably get a lump in my throat when I watch the ultimate All-Around winner stand on the podium while her national anthem plays.
     Then I will do it all again in four years.

One Call: A Mandatory Mindset

    
      With national spotlight on perhaps what is a crime so heinous, so shocking, so incomprehensible, I am taking this blog to spend just a few minutes of time on an uncomfortable topic: child sexual abuse.
     It is, unfortunately, a very real thing in "the stuff of life".
     I have very strong thoughts and opinions about what happened in the middle of my beloved state of Pennsylvania at what is a fine university that became the snare where a depraved human being committed acts so horrific against children...acts I don't want to think about.
     But I'm asking us to think about it just for a few minutes.
     I'm not asking that we re-hash the past.  Hopefully, it can be put behind the victims and innocent parties so that healing can begin for all.
    I'm asking today that we really think about what each of us would do in the event that we personally witnessed, suspected, or were informed of incidents of child abuse ~ be it sexual or otherwise.
     Because as much as some of us want to believe it is about other things, at the heart of this matter is that moment of personal choice ~ no matter what the circumstances, the climate, or the culture ~ in which each of those children was desperately waiting for someone to put their well-being above everything else.
     I recently wrote a blog about what to do in the case of a riptide.  Surviving it, like any other natural force, requires being able to identify it, and then preparing for it in the rare unlikely instance that it actually happens.
     Today, I ask all of us to do the same for something even more tragic, the abuse of a child.
      We all want to believe that "I would do this" or "I would do that" if we came face to face with what is such a sick act of evil against a young child counting on adults to protect him. And maybe we would.
     But what would each of us really do should we ever encounter this horror against a child?  Would we place the dignity of that single child ahead of status, a job, an image, security, a relationship?
      In my state, due to my occupation, I am a "mandated reporter". If I suspect, witness, or am told a child is being abused, I am bound by law to contact PA Childline.
      The other kind of reporting is known as "permissive reporter".  These people are not obligated by law to report abuse, but they can.
     Whatever the laws are in your state or mine, I believe that we ALL have to begin to accept the individual moral responsibility that we are all mandated reporters.
     I am not suggesting a change in the laws of any state.  I am encouraging, perhaps even pleading for, a complete change in personal mindset.
     Prepare for that moment of decision, that single chance to choose between right or wrong, by getting familiar with the process by visiting your state's agency designed to protect child and investigate cases of abuse.  If in PA, I encourage you to visit http://www.preventchildabusepa.org/faq.php  If in another state, check out the link below.  Just like a rip tide, tornado, or fire, get educated about who to contact and what to do, and then let's pray that we never see this crime's ugly face.
     But if we do, let us be so sure, so prepared, so swift in our response that we don't hesitate to make the single call that puts a defenseless child's life indisuputably and unquestionably ahead of anything else.

Adventures in the Kitchen: On-The-Go Crock Pot Mushroom Chicken

     An easy crock pot meal never goes out style, especially on days when the "to do" checklist runs long.
     So today, while running errands, I grabbed what I needed of the following:

     Chicken Breasts ~ 4 whole
     Cream of Mushroom Soup ~ Family-sized (I use fat-free)
     Milk ~ One & a quarter soup cans (I go with 1 % fat)
     Sliced Mushrooms ~ One 8-ounce package
     Pepper
     Pasta ~ One pound box
     With cleaning to be done, dishes to wash, and clothes to launder, I turned the oven to 350 degrees and turned the crock pot on low.  While the oven pre-heated, I poured the can of condensed cream of mushroom soup into the crock, then added one and a quarter cans of milk. (I went with 1 percent to keep it fairly light, but you can opt for skim, 2 percent or whole ~ whatever you have.)
     Once in the crock, I mixed the soup and milk well, sprinkled it with pepper, and put the lid on it.
     By that time, the oven was ready for the chicken breasts, which I put in and set the timer for 45 minutes.  I did some dishes and threw some clothes in the washer, then took fifteen minutes to wash and sautee the mushrooms.  I drained them, then sliced the finished cooked chicken and added them both to the crock, stirring well.
     So now I can finish my errands and, when everyone is ready to chow down, take a few minutes to make the pasta of choice (my personal favorite is Garden Delight Rotini) and heat up a veggie.
Another option is to go with rice or pieces of toast or bread instead of pasta. (And of course, you could always serve it with another one of my favorites, the pita.)

Break The Grip of The Rip



     I am a mountain girl at heart, but I have enjoyed a lifetime of going to the beach with my family for as long as I can remember.  My memories go way back, and they are fond and furious.
     Most of my wonderful experiences are along the coast of South Jersey... frisbee throwing, chilling with siblings and cousins, Kadima tournaments, sandy sandwiches, amusement piers, Pictionary battles, and hours of facing waves even after the lifeguards drug their towering stands away from the waterline for the day.
     In recent years,  however, I have also had the pleasure of traveling south with my in-laws to places like Myrtle Beach and the Outer Banks (still the only place where I have ever seen black bear.)
     We always got beach-front property, so our backyard was the sand and sea at all times.  My experiences down south have been rocking chairs on the porch, fireworks every night, card games (which I stink at), and episodes of The Bachelorette and Survivor.
     I have been blessed with many positive memories along the coast of the Atlantic Ocean; but, sadly, one memory in 2009 still haunts me and, I am sure, many who remember that day.
     It was a late Wednesday afternoon, and what happened that day changed the spirit of the week from cheerful to somber.  As many of us sat rocking on the chairs on the porch, others lay on blankets drinking in the sun, and still others floated on rafts in the water, a distinct sense of urgency swept the beaches.
     About three football fields away from our rental, we could see lifeguards clearing people out of the water, ambulances storming the sand, and helicopters hovering above.
     We did not know what was happening, but an hour or so later, the man delivering our pizzas told us that a young thirteen year-old traveling with his baseball team got caught in a riptide.  Beach-goers who immediately formed a human chain did not rescue him, nor did police vehicles scouring the coastline through the night recover him for his family.
     His name was Lonnie Hill, Jr.  He was a son, a brother, a nephew, a cousin, a friend, a classmate, a grandchild, and so much more than we will ever know. He was a young boy who was well loved.
     We did not know him personally, but his life forever changed mine that day.
     Up until that afternoon, had I encountered a riptide I never thought about, I would not have been prepared for, would not know what to do, and would absolutely not be here today had it happened to me. 
    And I think the same is true for most of my family and friends.
    So every year since that day, I make a point to, like it or not, harrass all those I love with frequent texts and postings about handling the unlikely, unpredictable riptide.  It may never happen to you or anyone you love, and, hopefully, it won't.  But, on any given day, it can happen to anyone.
     So, take the one minute required from time to time to prepare for the unlikely. Remind yourself, inform your kids, and tell everyone you know.  Lonnie Hill, Jr. was not spared, but his passing may save at least one life. And a single life is everything.
     In the case of riptides, knowledge is power. Let's keep our seaside memories happy ones. See below.

Adventures in Fitness: The Cindy Crawford Workouts


     So with Retro Workout Week complete, I was planning to head to the cabin by Friday morning.  I haven't been there in over a month, and it's time to get back to my garden adventures.
     Well, instead, I stayed local and spent the weekend hanging with my bff, who was in need of moral support as she sends her one & only son off to college in tomorrow.
     We spent Saturday afternoon in the pool chatting about just about everything.  In those rare, brief, cherished hours, I mentioned how doing the 1985's Jane Fonda New Workout last week brought back memories of jogging around the family living room with my sisters and cousins and slapping high fives to each other like the participants in her video.
     My best friend is many things.  She is a good listener. She is loyal. She is forgiving. She is funny. She is truthful.
     But she has never quite understood my little addiction to workout videos.  While I love them as a convenient, engaging way to exercise, she pretty much loathes them.
     That being said, as we drifted around aimlessly in her pool, she does follow my blog, and she did mention that she took a particular liking to one of my VHS tapes from 1993, not long after the son she is now seeing off to college was born.
     All she really knew was that it was a Cindy Crawford workout.
     OK, since I own all three, I asked the key questions to identify which video workout she was talking about.
     Here you go:
   
     Cindy Crawford: Shape Your Body

     Her first workout video, now on DVD, was released in 1992.  In it, she is guided by her fitness instructor Radu, and there are two intense 40-minute workouts, plus a 10-minute routine for days short on time. 
     The video stirred a little controversy, but, of her three workouts, it is my personal favorite and one I still work into my rotation often.  The complaint was that she raced through some of the exercises too quickly and with unsafe form, but, like most reviewers indicate below, those familiar with exercising knew to do the moves in a controlled manner.
     In the 20 years I have done this workout, I have never been injured, but I do get sore still.
     And of all the videos I own, CC seems to be the only one who actually stops to drink water throughout the workout.
     Her personality is wonderful, the music is great, and the settings are pretty cool.  And judging by most reviewers below, this workout still delivers.

     Cindy Crawford:  Next Challenge
    This is the workout my friend liked best out of all the videos she has been forced to witness.  She's seen everything from Denise Austin to Cher to Jody Whatley ~ and this workout video is the only one I think my bff has ever actually done.
     In 1993, again with Radu, CC clearly heeded critics' complaints and they produced an hour-long total body workout that targets every body part with special attention drawn to doing the moves safely.
     When I have an hour, I sometimes choose this good, solid athletic workout with more great music and unique settings.  (But, I would still probably do the first workout from '92 with my own twenty minutes of cardio beforehand.)

     Cindy Crawford: New Dimension
     This time, CC went with Kathy Kaehler, who produced 4 workout videos with another super model, Claudia Schiffer.  Released in 2004, it is separated into three workouts ~ a 12-minute starter, a 16-minute one that is a little more intense, and a 40-minute total body workout using weights.
     This gets mainly positive reviews below, but I haven't used it as much as her first two.  But I definitely recommend it for those new to working out or as a good post-partum re-entry back into the world of workouts.  With its pretty settings and calming blue lighting, it is not at all intimidating, and, again, her personality is completely down to earth.

Adventures in Fitness Top 5 Workouts: Pick #5

Jane Fonda's New Workout, 1985


      The quintessential retro workout video is, beyond compare, Jane Fonda's "New" Workout, released in 1985.  In fact, the plain cover of this VHS belies the colorful, campy, and ultimately effective workout held within.
      This video has all the elements that a workout tape should have:  great direction, well-planned choreography, an engaging set...and reason to put it back in the video player for both the beginner and the advanced at-home exerciser. It delivers results.
     Yes, you get a cast that includes former 1970's TV actors, a spunky blonde in a visor, a man in a half-shirt, lots of leg warmers, and plenty of  leotards, but you also get two versions of very enthuised participants exhibiting good stretching, an intense cardio segment, and exercises that target the entire body.
     In fact, Jane is actually ahead of her time as she elongates stretches in pilates-like style and encourages hydration during the entire workout (though no one actually models it, like Cindy Crawford in her 1992 release.)
     You can argue with the fashion and the music, but you can't argue with the logic behind this video workout.  The format is flawless.
      If anything, the workout has one error. At the time, "aerobics" meant high-impact, high-energy moves only.  So, as a result, this video presents no modification for those with who require low-impact moves throughout Leslie Lilian's lively and timeless cardio burst. It is truly the only real imperfection ~ and totally forgivable, given the era.  There's no reason not to modify the moves on your own, if need be.
      Read the many customer reviews singing the praises of this classic ~ as well as the $30 price tag for a VHS! (What movie costs as much?) Judge for yourself, loves, but Jane set the standard with this effort.

Bacon Wrapped Stuffed Mushrooms "Lite"


   
     Here's an easy little Fourth of July appetizer recipe you can whip up in less than an hour before heading out to the family cookout.
     Because our family will be hanging out on the beach in a month, I modified the ingredients to the "lighter" version of everything, but you can opt for regular cream cheese and bacon if you prefer. (Me personally, I can't let all these summer workouts getting beat up by Jillian Michaels go to waste!)
     Whatever way you choose, here you go:

Mushrooms ~ 20, stems removed
Turkey Bacon ~1 lb, some cut in half
Fat-free or Low-fat Cream Cheese ~ 16 ounces
Green Onions ~ 1/2 cup, chopped

     Turn oven on to 350 degrees. Mix together green onions and cream cheese, then stuff mushroom caps with the mixture. Wrap each mushroom with a half slice of bacon, securing with toothpicks, and place on baking sheet.  Bake for 20 minutes or until bacon is cooked through.
     For this particular occasion, I am serving the apps with blue cheese dressing, celery sticks, and patriotic toothpicks, which I exchange with the original picks once the appetizers are removed from the oven. Then I cover loosely with foil and am out the door to celebrate the birth of this awesome nation with loved ones.
     For the record, if you prefer Bacon Wrapped Mushrooms on the grill, I came across this recipe you might want to try instead: Blue Cheese Filled Bacon Wrapped Mushrooms.  A little different from mine, but if you are a griller, these may be the way to go for the holiday.
